"Mama Braun's Spaghetti Sauce" from Cafe Ah Pwah, Gilbert, AZ
15 lb Ground beef (or 10 lb ground beef and 5 lb ground lamb) 2 qt Chicken necks and backs, boiled down in own broth 9 lb Onion, unpeeled 2 qt Beef stock 4 1/2 qt Bell peppers, blended 3 ga Progresso tomato paste 2 t Salt 3 lb Mushrooms 2 2/3 c Sugar 1 T Oregano Gunk, to taste (see recipe) Fill two 5 gallon pots with equal portions of ground beef (or beef and lamb) and scramble over high heat until well done. Blend onions and add to meat, along with beef juice. Blend bell peppers and add to meat. Add tomato paste and cut heat from high (boiling) to simmer. Add salt, mushrooms, blended chicken meat, sugar, "gunk" and oregano. This should be let to simmer for half a day to a full day. When finished, can freeze basic sauce in jars or ziploc bags. TO SERVE SAUCE: Thaw 1 1/2 quart container of sauce (four servings). Peel and sliver 4 garlic cloves into blender; add 1 cup wine (use sherry or burgundy) and 1 T brown sugar, blend. Add to sauce and heat until ready. Beau's notes: * This sauce is patterned after that of a Syro American restaurateur of Ocala whose restaurant, The Blue Bird, no longer exists. However, the spaghetti sauce recipe, one Mama (after trying at first more or less to duplicate the Blue Bird's) refined, is immortal. Because of the vegetables used in it, the family tradition has been to make a meal of spaghetti with the sauce alone. The basic sauce is useful also for lasagna and other pasta dishes. * Mom uses juices from beef roasted with sherry and "gunk" for beef stock. * The family is still boycotting Hunt's anything!

different but not that great
DESCRIPTION: The decor is eclectic with mint green walls, dark wood chairs, brushed metal kitchen doors and bar, and richly colored paintings of large people. Someone brought us pita chips and hummus before we even ordered which was a little odd and several seemingly random people came by and asked us how we liked everything but other than that the service was ok. As for the food, it can be summed up in two words: butter and salt. The pita chips were buttery and still soft in the middle, my butternut squash soup was buttery, and my greek salad was very salty with more of the buttery pita chips. The salmon dish was also buttery. The one thing I liked was the hummus. The menu is rather small and they were out of the dish I originally wanted, the gnocchi.

Not your average hotel restaurant
DESCRIPTION: Fortunately, we can't recommend a dish. That's because the menu changes daily, so what I had last time I was there may not be available when you visit. But, not to worry, this place has excellent food. Each day the chef decides on the entire menu for the day based on what's available and fresh in the markets. The menu is written up on a small chalkboard and brought around to the tables for you to peruse. Can't decide? Get a sampler plate with tastes of three entrees. Oh and one more thing, this place is jumping like grasshoppers with the locals; make a reservation.

A Wonderful Dining Experience
DESCRIPTION: Deliciously different food--contemporary variations on a Mexican theme, using fresh ingredients, served by attentive wait staff. At dinner, entrees are priced at $15 to $19. The Plato Poca Cosa is a "chef's surprise" sampler: 3 different menu selections, chosen by the chef. The menu selections vary by the day. My polla mole amarillo was exceptionally good.

Greatly Overrated
DESCRIPTION: What a disappointment. After travelling halfway across the country, I was eager to try Cafe Poca Cosa. I'd seen it recommended in a few travel publications (as well as in the Stern's great book Roadfood). We walked through the door, and after a few minutes, we were led to a table by Wolf; our hyperactive, and scarily cheerful waiter. Emphatically wagging his finger, he let it be known that Cafe Poca Cosa did not, I repeat NOT serve tacos or enchiladas. So. What do they serve? Wolf ran off and in a few minutes returned with a chalkboad listing the night's menu. In the meantime, my smartass wife begged me to order a taco. I wish I had. Rather than let us peruse the menu, Wolf tried to push the salmon (that well-known Mexican fish). I ordered a chicken dish with an overly complicated name. My wife had the salmon. Both were ghastly. My chicken (two whole boneless breasts that were big enough to have come from an emu) was rubbery, dry and flavorless. Her salmon was so overcooked that the fillet had completely disintegrated. Both orders came in deep bowls atop various greens, whole green onions, and slices of fruit. Ghastly. After Wolf's bragging about the talent of the bartender, I asked if could order a caipirinha - a Brazillian cocktail. He asked me what was in it, and I told him rum, lime juice, simple syrup (that's water and sugar) and ice. He apologized and said that their bar didn't stock simple syrup. Save your money and go to a taqueria in South Tucson.

Great lunch restraunt
DESCRIPTION: For the very first time, I've gone into a restaurant and feel so much at home. You do get treated like if your part of there FAMILY too!! You go in and feel like if your at home eating comfortable. Very home at home!! Gracias~~
